It turns out that if I don't eat anything until mid-afternoon, then I feel really shaky and like passing out. Even after having eaten and hydrated I still don't feel all the way better. Oops. Probably doesn't help that it's like 1:30 in the morning and I'm still up either. Double oops.

Sounds about right. Like, a snack later doesn't make up for not having had the protein? And depending on the snack, it might have created some more trouble?
Good that you are noticing these things so that you can take better care of yourself. Did you just forget to eat, or did you not have any portable food (a granola bar, some nuts, juice, etc.) with you?
This year it took me a few days to fully rehydrate after the Yom Kippur fast.
Keep working on the bedtime. You can do it.
